Salad. The joys of growing our own salad and the hope that one day we might be able to feed the whole school with a salad bar from our garden came to life this year. Direct sowing in the garden lettuce seeds in March/April, meant a huge bumper crop of a variety of salad greens including: ruby red lettuce, kale, butter lettuce, romaine lettuce, Asian greens, mustard greens, bok choi, and some heirloom varieties.

Finally, since embarking on this journey, I was thrilled that the garden grew so much, we had enough for 5 cooking classes and 14 bags to distribute during Sports Day at the concession. Now, I don’t know about you reader, but most school event concessions are full of yuck; hot dogs, bagged chips, pop and juice. Yes, I know, it’s once in a while, schools are trying to fund raise and kids eat that stuff but come on! Can’t we at least try and provide some good stuff?! We offered the bags, the largest size ziploc freezer bags, to folks who could pay “By Donation to Grow More Salad” and in the end, with staff and parents all grabbing them up, made about $39. Not bad don’t you think?
